Chocolate Chip Cookie Dough Cookies

I know that seems super redundant, but these cookies really do taste like cookie dough. I love them. My friend Katie scarfs them down like so many candies. It’s a really, really good idea to make these for someone you want to sleep with.

Yeah, I went there.

Chocolate Chip Cookie Dough Cookies

1/2 cup light brown sugar

1/3 cup regular cane sugar

2/3 cup oil (coconut works well in these!)

1/4 cup tapioca or corn starch

1/4 cup fake milk, plus extra in case the dough is too dry

3 tbsp vanilla extract

1/2 cup quinoa flour

1/2 cup rice flour

1/2 cup hazelnut flour

1/2 tsp baking soda

1/2 tsp salt

1 tsp xanthan gum

1 bag of your favorite chocolate chips

Preheat oven to 350. Line two baking sheets with parchment paper. What, you don’t have parchment paper? Buy some. Mix the sugars, oil, and starch until the resulting syrup gets goldeny brown, and you don’t see any more starch lumps. (Grossest phrase ever…) Add in the milk and vanilla. Sift in all dry ingredients. Mix mix mix until combined. Stir in all of your chocolate chips.  Using two spoons, drop little 1-inch cookie balls onto your baking sheets. These don’t spread too much, so you don’t have to leave lots of room. Bake for 9 minutes, or until the bottoms are just slightly golden brown.

Eat the shit outta some chocolate chip cookies.
